In MinimServer setup, there's a property named userTags that lets you choose exactly which tags in your music collection you'd like to see when browsing. The control point will show you the tags you specify there, and no others. Also, you can use the control point to browse these tags in any order, as there is no predefined hierachy for selection.

You can select the small font size in SongBook Lite setup, which will give you a consistent font size for all items. If you do this and use landscape mode on the iPhone, you probably won't get 100 characters but it shouldn't be too far off this. (I can't check the exact number at the moment.)
