Yes and not. Personally speaking I'm not that sensitive regarding the absolute phase, at least not to the point that I can hear if the system is in absolute phase reversed without making any comparison but some people are. Anyway, as linnrd pointed out, with some records the difference is quite big.

If interested, I can make a short recording where changing the absolute polarity will have a very audible difference to the listener if people are interested. It should be possible to link to it from here for those of a curious bent. Bear in mind that this will be an example of the extreme which should answer Franbour, but rather meaningless in the general scheme of things because most recordings will not exhibit such a large difference.
